White Dove is a celebration of the art of turning grapes into pink wine. This technique predates technology and originally comes from southern France, but here in southern Italy, we make a deeply pigmented, bright pink wine that is worth getting to know. And, by the way, we call it by its Italian name: rosato, which speaks to how different this style of wine is. White Dove is dry with fresh acidity and juicy flavors of cranberry, strawberry, cherry, and a creamy finish.
FROM THE HEEL OF THE BOOT.
In between the Adriatic and the Ionian sea, vineyards cover the region of Puglia, where White Dove is crafted. Fertile soils of calcareous clay and limestone give the wine a unique minerality and the sun-drenched vineyards get a little cool-off from the breezes that come in from the sea. Here, it’s totally normal to have a glass of rosato with lunch, and we won’t judge you if you do too.
GO FOR DISHES WITH A MEDITERRANEAN VIBE.
Rosato is the drink of the Mediterranean sea, and as the saying goes: what grows together goes together. So when pairing White Dove, think about classic Mediterranean ingredients and put your own spin on them. Some of our favorite go-tos are chickpea salad, seared scallops, chicken orzo, and mushroom flatbread.
